Warm tortillas loaded with eggs, egg whites, cheese, and beans will bring some heat to your kitchen! These are light and healthy, and are guaranteed to lead you back to fit.



Servings: 1
Preparation time: 10 minutes


  1. Lightly coat a medium nonstick skillet with cooking spray and place over medium heat. Place tortilla in the skillet and warm for 30 seconds, then flip and warm the other side for 30 seconds. Place the warmed tortilla on a small plate.

  2. Whisk the egg and egg whites together. Pour into warmed skillet and cook, stirring occasionally, until set.

  3. While the eggs are cooking, place the lettuce leaf on the tortilla and spread the refried beans over the lettuce leaf. Top the beans with cooked eggs, shredded cheddar cheese, and 2 tablespoons of salsa.

  4. Roll it up and top with remaining salsa. Serve and enjoy!

Bill Phillips Back To Fit Recipes: Bill's Perfect Pot Roast

It only takes about 20 minutes to prepare this meal, but the cooking time can be up to 10 hours. You place the ingredients in a crockpot, set it to cook on low, and leave it for the day.


If you’re going to be at work all day, put the prepped meal in the crockpot in the morning and take it out when you get home. If you’re not going to be out all day, set the Crockpot to the high setting and cook for approximately five hours.


By making eight servings at once, you can store extra servings in the refrigerator or freeze them for future nutritious, delicious meals that can be prepared in minutes.



Servings: 2
Preparation time: 40 minutes


  • 3 lb boneless beef bottom round roast, trimmed of all visible fat

  • 2 onions, sliced

  • 2 tbsp Hungarian paprika

  • 1/2 tsp dried basil

  • 1/2 tsp dried oregano

  • 1/2 tsp dried thyme

  • 3 cloves garlic, minced

  • 1/2 cup water

  • 1/2 cup red wine (optional)

  • 1 can (15 oz) low-fat reduced-sodium beef broth

  • 1/4 tsp ground black pepper

  • 1-1/2 lb baby carrots

  • 2 lb small new potatoes

  1. Lightly coat a large skillet with cooking spray and place over medium-high heat. Add roast and brown on all sides, about 3 to 5 minutes per side. Place browned roast in crockpot.

  2. Add onion slices to skillet and cook, stirring occasionally, until golden, about 5 minutes. Add paprika, basil, oregano, thyme, and garlic; cook 2 more minutes. Place onion mixture over roast in crockpot.

  3. Add water, wine, broth, black pepper, carrots, and potatoes to crockpot. Cover and cook until tender, about 10 hours on low heat or 5 hours on high heat.

  4. Remove roast from the crockpot and set on cutting board. Use a large spoon to skim fat off cooking broth.

  5. Slice roast and place a portion on each plate along with a portion of potatoes and a serving of carrots. Top sliced roast with a couple spoons of broth. Serve and enjoy!

Some foods, like crepes, seem like they’d be a lot of work, but once you try making these protein-rich delicacies, you will never look at breakfast snacks the same! Plus you get bonus points around the kitchen for answering the call for sweet things without ruining your gains with sugary treats.



Servings: 2
Preparation time: 15 minutes


  1. In a medium mixing bowl, whisk the egg substitute, milk, flour, and sugar substitute until well blended.

  2. Lightly coat a small nonstick skillet with butter-flavored cooking spray and place over medium heat.

  3. Pour half of the crepe batter into the heated skillet, then quickly lift and tilt the skillet to spread the batter. Return to heat. When the edges of the crepe are dry, carefully flip it over and cook until lightly browned, about 2 minutes.

  4. Place crepe on a small plate and repeat with remaining batter.

  5. In a small mixing bowl, combine yogurt and protein powder; mix well. Divide filling into two portions and spoon into crepes. Top each with half of the berries. Fold the crepe over the filling, serve and enjoy!

Tasteful Tip

Crepes can be made ahead of time and stacked (unfilled) placing wax paper between them. Unfilled crepes can be sealed in Ziploc bags and refrigerated for several days or frozen for up to two months. Thaw frozen crepes in the refrigerator or at room temperature. Then carefully peel them apart and fill.

This pudding can stand alone, be accompanied by various toppings, or be used as pie filling. The important thing, of course, is that it is also good for you and your gains. You need to enjoy your journey back to fit, and this treat fits the bill.



Servings: 2
Preparation time: 25 minutes


  • 1 cup cold skim milk

  • 1 packet vanilla Right Light

  • 2 tbsp fat-free, sugar-free banana instant pudding mix

  • 1 banana, sliced

  • 1/2 cup Cool Whip Free

  1. Pour skim milk in blender. Then add Right Light powder and blend on medium speed for 15 seconds.

  2. Add pudding mix and blend on high speed until thick and creamy, about 45 more seconds. (Stop blender to stir with spoon and scrape down sides as needed.)

  3. Spoon into two dessert glasses and chill in refrigerator for at least 20 minutes.

  4. Top each serving with half the banana slices and a dollop of Cool Whip. Serve and enjoy!

This pudding recipe is a great dessert dish for any healthy lifestyle! It’s made with Right Light nutrition shake mix, which is very nutrient-rich and healthy. Remember, if you have a nutrition shake mix or protein powder you prefer other than Right, please use that instead.

White fish is a great source of protein, and you know you need more! Add the wonderful fats of avocado and a variety of spices and you have fish tacos that will carry you back to fit. This meal can get a little spicy—jalapenos!—but you can take it.



Servings: 4
Preparation time: 35 minutes


  1. Preheat grill to medium.

  2. Combine olive oil, juice of 3 limes, 4 garlic cloves, and 1 tsp cumin in a shallow bowl or pie plate. Then add fish to this marinade and let it soak up the flavors for 15 minutes at room temperature, turning once after about 7 minutes.

  3. While fish is marinating, in a separate small mixing bowl, stir together the remaining lime juice, garlic, and cumin with diced avocado, onion, jalapenos and cilantro.

  4. Place marinated fish on hot grill and cook for approximately 5 minutes, then turn and grill for approximately 5 more minutes, until opaque throughout. Place cooked fish on a cutting board, let it cool slightly, then slice into thin strips.

  5. While the grill is still hot, place tortillas directly on it and grill them for about 30 seconds on each side.

  6. Place two tortillas on each plate. Put a lettuce leaf in each tortilla, fill with a portion of grilled, sliced fish, and top with tangy avocado salsa. Fold the tortillas over, serve and enjoy!

Sometimes a nutrition plan begs for a little decadence, but if you really want to get back to being fit, you need to eat healthy on a consistent basis. This recipe for baked chicken Parmesan is perfect!



Servings: 2
Preparation time: 40 minutes


  1. Preheat oven to 400 degrees F.

  2. In a medium mixing bowl, beat egg whites with fork until slightly frothy. Then, mix breadcrumbs and 2 tbsp of reduced-fat Parmesan cheese in a pie plate.

  3. Dip chicken breasts in egg whites and then into the breadcrumb mixture, coating both sides.

  4. Lightly coat a baking sheet with cooking spray. Place chicken breasts on the baking sheet; bake for approximately 12 minutes, turn over and bake approximately 12 more minutes, until chicken is no longer pink in the center and coating is golden brown.

  5. While the chicken is baking, prepare spinach pasta according to package directions.

  6. In a small saucepan, warm pasta sauce over medium heat.

  7. Divide spinach leaves between two separate plates. Layer portions of warm spinach pasta and baked chicken breasts over spinach leaves. Top with pasta sauce and remaining Parmesan cheese. Serve and enjoy!

This chicken dish is healthy and delicious! Bake the chicken, rather than frying it in fat, to improve the flavor while enhancing the nutritional content.

My fitness story begins early in my life. I signed up for little league football when I was 9 years old. I was probably the only kid on the team who liked the exercises better than the game. I had more fun doing push-ups, sit-ups, and wind sprints than playing football, so my coach put me in charge of leading calisthenics and exercises. That was my first transformation camp.

A History Of Fitness


As I grew up, I loved to learn about fitness and teach people what I had learned. I paid for my college education through personal training and coaching. I thought I wanted to be a doctor, but in 1990, I started a mail-in personal training business, and my fitness career really took off. From there, it just kept growing.


The first celebrity I worked with was Sylvester Stallone as he was preparing for his role in “Cliffhanger.” After I helped Stallone, my reputation for helping stars get muscular for a movie started to grow.


As I grew up, I loved to learn about fitness and teach people what I had learned.


I helped Demi Moore get strong for her role in “GI Jane;” I trained Edward Norton from scrawny to brawny for “Fight Club;” and I’ve continued to work with my favorite comedian, Jerry Seinfeld, through the years. I’ve also worked with athletes Karl Malone, Roy Jones Jr., Terrell Davis, Shannon Sharpe, and John Elway. When the Broncos won their first Super Bowl, I was the nutrition and supplement expert for the team.


Along the way, I wrote the books “Body for Life” and “Eating for Life,” founded the magazine “Muscle Media,” and started the EAS supplement company. I wanted to teach people everything I had learned. I wanted to cross the abyss between knowing and doing. I wanted to share, and that desire has led me here—but my journey hasn’t been without hardship.


I made a name for myself by teaching people how to get in shape. I had books, a magazine, and videos that inspired people and taught them how to work out correctly and eat well. But I also know how it feels to get out of shape and to fight to regain your fitness. I have a transformation story, too.

The Fall From Fit


A few years ago, I went to walk downstairs after a home workout. On the first step, I came down with about half my foot on the stair, and my leg was so exhausted from working out that it just buckled. I fell forward, knees first. All I remember is that it sounded like six dry branches breaking. When I grabbed the rail to try to stand up, I found that I couldn’t move my legs.


I pulled myself backward up the stairs with my arms and called the ambulance. As I was riding in the back of the ambulance, I was pretty scared. The EMT was more concerned about my neck than my knees because, on a fall like this, I could have easily broken my neck.


Falling on my knees the way I did caused my quadriceps tendon to rupture from my knees. In a way, I had a lucky fall. My legs were the strongest part of my body, and they took all the damage.


After the surgery, all I could think about was how much pain I was in. It felt like burning knives were beings stuck into my legs. The doctor said it took five hours to reattach the muscles. They drilled holes in the patella and brought the quad muscle back down to where it should be. I had 500 stitches in each leg.


Then, the surgeon gave me some really difficult news. He told me that if I bent my legs in the next 40 days, I’d be right back in for surgery. So I was put in leg braces that locked my legs out. I was constantly sweating. Everything was really uncomfortable.


I looked in the mirror for the first time, and I was devastated. All the years of working out and all the years of knowing what to do didn’t mean a thing.


I was released from the hospital a couple of weeks later. I lay in my bed at home. I couldn’t move; I couldn’t even bend my legs. I ate for comfort.


Four months later, I was able to stand up and walk into my bedroom. I looked in the mirror for the first time, and I was devastated. All the years of working out and all the years of knowing what to do didn’t mean a thing. I got the message real quick: I wasn’t special. I was just like everybody else.


Back to Fit


Imagine being Bill Phillips. You’ve written books and have millions of people doing your fitness programs, and then you look in a mirror and see an unfit, weak, sad person. When I looked into the mirror, I got pissed off. I looked at myself and I said, “To hell with this. I’m not doing this anymore.” I made the decision right then and there that I was going to work.


I immediately started to take action. I went to the kitchen and took out all of the junk food. I got out a trash can and I started throwing that stuff away. It made me feel better.


A couple days later, I was able to get my walker into the gym. I did some Frankenstien curls. I wasn’t really starting a program; I was just seeing what I could do. Getting the dumbbells back in my hands was like taking a pain medication and antidepressant at the same time. I love lifting weights, and I was excited that I was getting close to a time when I could actually train.


As I went through my transformation over the next several months, I planned every meal and every workout. Each day that I went to the sports center and ate healthy was a win. Slowly but surely, I regained my fitness.
